According to the Quail Maps Wapping Sdgs only have 2 roads and it seem to me that they should work in the same way as Latchford and Latchford MSc to facilitate RR for services requiring it.

Just an observation, rather than a criticism
Obviously this isn't a quick or likely fix/change.

I think also in terms of what is seen in timetables, loco RR are generally not timetabled as to appear on published/archived timetables. This might be why it's been missed.

I've logged this under mantis as 32792 for the 2015 timetable to be reviewed. I'm not sure any physical update to the sim will be actioned currently.

The Gullet sidings join back into the Down Wapping siding further along (presumably under local control), so it's not a simple run-round loop like Latchford.

Very true. I hadn't noticed that till you pointed it out. In the same breath though, all these Liverpool Dock to Drax/Ironbridge etc, are going there for RR, but there isn't internal roads to actually do it, so I'm guessing the RR are done into the sidings adjacent to Edge Hill CS.
Gullet was probably used for Loco changes, possibly with Loco's pre-positioned in the Edge Hill sidings adjacent to it when there was a change, or more likely the inwards driver takes it into Gullet and comes back out with a fresh loco on/via the other free Wapping siding to go onto the rear of the train.

Based on a recent video by Don Coffey, the train enters one of the Wapping sidings and the loco runs round via the other. After the loco has run around, a second train may enter the other siding, but must wait for the first train to depart before the second run-round may proceed.

This is exactly what I has assumed. I didn't explain myself clearly, I meant exactly this but obviously when the engine comes out it would be via the Edge Sidings 1 or 2 and back onto the train; that was my meaning in my earlier explanation.
