I've recently bought a tablet / notebook hybrid, and naturally one of the first things I wanted to install was SimSig.

SimSig runs fine on the tablet, although scrolling is a pain and you have to be a lot more accurate with your clicking.

After having a play around, I've found paged Sims to be much more touch screen friendly as you don't have to worry about the scrolling. They also suit the 10.1" screen a lot better.

I was wondering, was there more paged Sims than are currently available? If so, is there any possibility of making them available again?

Yes, quite a lot. Swindon and Didcot existed as [separate] paged sims as did Exeter, Westbury, Bristol, Kings Cross, Peterborough, Liverpool Street, North London Line, Southhampton and Stafford to name a few that I can think of. I think if you dig through the Wiki and look at the iteration timeline of the various Sims you can see which changed.

Im not sure all of them will run on a modern 64 bit system. I ended up having issues getting some of them to run in the end even with a modified 64 bit loader.

Luckily, even though this has a 64 bit chip, they factory install it with 32 bit Windows. To be fair, you'd be hard pushed to notice the difference given the lighter use a tablet gets.

One thing to bear in mind is that paged sims will be old, won;t have the latest features and in some cases, may not run the latest TT's on them, particularly if that sim has now been upgraded to a scrolly.

At least on my system, a two-finger drag sideways scrolls the scrolly sims.
