I don't know if anyone here is savvy enough to know how to set up the port forwarding but the instructions I've found so far as as much use as a chocolate fireguard.

Does anyone here know how to set this up as I do have a internet connection working but I just don't know how I'm meant to set up the port forwarding which is important as I can't host otherwise on this connection.

I did see that site but despite following the method given I still can't get a successful Port Open, I'm not sure if it's me or if I have't got a Static IP set up.

I know you cannot host a session using a phone as a hotspot that I do know but I'm struggling to understand where I'm going wrong.

You're going to have to give way more information to get detailed help. Where, exactly, are you getting stuck? Is the port forwarding entered but clients can't connect? Have you tried port scanning tools? Can you host locally on your network? Etc.

External IP or internal IP? In any event a static IP is irrelevant for the purposes of making a connection. You need to know the internal and external IPs at the time you are creating the network which you can then use to set up your internal arrangements and to advise those wishing to join of the IP they should use to connect to you. Only in very rare circumstances while these change while you are hosting a session although there is every possibility they will change if you power down your modem or modem/router.
